Orange Cinnamon Bread

Today in Arizona the temperature is going to get to a high of 108! It is still hot here… and we Arizonans are wondering if it is ever going to cool down. We are all saying it. I wish it was cooler. It is soooo hot!!

It is not cooler. But for most of the country… you are probably experiencing cooler weather. Am I right??

You are getting out your fall decor. Setting up some pumpkins maybe.
I only wish that were the case here. We are still swimming in heat!!!

I wanted to do some fall baking. Yet… still incorporate the Arizona summer heat. So….I came up with this.

Orange Cinnamon Bread.

Summer meets Fall.

This bread is delicious! It is made from a cake/muffin mix and it couldn’t be more sweeter!

Bread

  • 1 pkg. cinnamon swirl crumb cake and muffin mix [just the dry cake mix]
  • 1 egg
  • 2/3 cup orange juice
  • 1 tbsp. grated orange peel

Orange Glaze

  • 1/2 cup powdered sugar
  • 2-3 teaspoons orange juice
  • 1 tsp. grated orange peel

Directions:

Preheat oven to 350 degrees. Grease and flour a bread pan.

For bread, combine muffin mix, and contents of topping packet from mix into a large bowl. Break up any lumps. Add egg, orange juice, and orange peel. Stir until just moistened. Pour into prepared pan. Bake at 35o degrees for 50-55 minutes or until toothpick comes out clean.

Loosen loaf from pan. Invert onto cooling plate and let cool. While cooling, combine the three ingredients for the orange glaze and mix.

[If glaze becomes too thin, add more powdered sugar. If the glaze is too thick, add more orange juice.]

Once the bread is cool, drizzle it with the orange glaze.  If desired, garnish with orange slices.

We really enjoyed this bread. I especially liked the outer crust. I would take a bit of an orange slice and piece of crust and oh my goodness. Heaven in my mouth.

Yes… I am sad to see summer go. It seems to be lingeringly here in Arizona… but I know that fall is soon around the corner. I couldn’t be more excited!

Let us remember the summer… and look forward to the fall.

Hope you have a great week!
