Even all my little ones liked this casserole.

This makes quite a lot of food. This recipe would be good for a huge family gathering or for a potluck dinner.

I have tried making severalĀ broccoli rice casseroles in the past and the recipe almost always asks for uncooked rice… which in the end never gets cooked all the way. I choose to cook the rice first and it is another extra step, but having the rice cooked all way is much better in my book. If you are on a diet… I am sorry this recipe is not for you. This is chuck full of cheesy goodness!

Soup+Sour cream+Cheese+Broccoli+Rice=a casserole of delight!

** I did add some cooked chicken, but that is optional.

This recipe is a winner and keeper in my opinion and my family. It was even good for “leftovers”.

Have a cheesy day-

Carrie
