Oatmeal Coconut Cookies. These cookies have been on my to make list for quite a while now. I am thrilled with the flavor, the crunch, and the sweetness that the coconut brings.

Oatmeal Coconut Cookies. My afternoon snack. When growing up my dad would make oatmeal cookies all the time. I can’t remember my mom ever making the cookies in our house… but I could be wrong.
In my own home… I don’t think my husband has ever made cookies. Now… that I am pretty sure about!!
I liked these cookies. They were good! They had a crunch yet sweetness to them. I love coconut! I love oatmeal!

I find mine at Costco and love them!
On the back of the bag of Coach’s Oats… I found this cookie recipe. I adapted it and this cookie turned out really really good!
Here is the recipe…
*slightly adapted from the bag of Coach’s Oats.
- ½ cup brown sugar
- ½ cup sugar
- ½ cup butter
- 1 egg
- 1 tsp. vanilla
- 1 Tbsp. milk
- ½ cup all purpose flour
- ½ cup wheat flour
- ½ tsp. baking soda
- ½ tsp. baking powder
- ¼ tsp. salt
- ½ cup quick cooking oats
- ½ cup Coach's oats
- ½ cup shredded coconut
- Preheat oven to 350 degrees.
- Cream together butter and sugars. Beat in egg, vanilla, and milk.
- In a separate bowl sift together flour, baking soda, baking powder, and salt.
- Add the dry ingredients into the wet ingredients and beat.
- Add oats.
- Add coconut.
- Mix until combined. Drop onto cookie sheet. *** I like to use an pampered chef cookie scoop.***
- Bake at 350 for 12-15 minutes.
- Remove from pan onto a wire rack and let cool.
My husband had a few of these and mentioned that they would be better with butterscotch chips in them. I would have to agree, however I didn’t have any on hand.
These are 100% whole grain oatmeal cookies! Now… oatmeal is great for you! It can lower your cholesterol, promote healthy arteries, and control you blood pressure.
I am pretty sure these cookies won’t do that for you, but I am sure you’ve never tasted oatmeal cookies this good!
Cookies are great to pack with you on a picnic, or a day trip to the canyon. Cookies are great for that boating adventure or that hike you’ve been wanting to take. Bake these up and add some energy and whole grain to your trip! You will not be disappointed.
