This past week I was in search of a new recipe and came across this recipe for Sweet Potato Kale Soup. I think I have only bought kale from the grocery store like one other time. I decided I wanted to try this recipe and so off to the store to get the ingredients. I think I have only bought sweet potatoes like one other time too! I usually don’t have these ingredients in home, not sure why??

But I think I will now add them to the weekly grocery store list… because this soup was good. With the fall and winter coming, this is a simple healthy soup that can be made in no time at all. Some nights its good to be able to be out of the kitchen within an hour, with a stomach full of delicious soup.

A friend of mine had a baby this week and so I made it one night for her family as well. {that is twice in one week}

As I was dropping it off she was appreciative for it because her mom told her she needed kale to help heal. Kale has amazing benefits…  look here for the top 10 health benefits of kale.

I LOVE this recipe… because it is made in a large sauce pan right on the stove and takes less than ½ hour to make. Let it simmer for about 10-15 minutes after its cooked and it makes your home smell all nice and cozy.

NOW… you might think I am crazy having soup in Arizona right now… because it is still so hot… but there is nothing like a bowl of soup to warm your soul. Even though soup heats up your body… there is nothing like sitting and slurping up the broth and veggies into your mouth with a spoon. Soup fills your tummy and your soul. Soup for the Soul… and this Sweet Potato Kale Soup was just what my soul needed that night. In fact.. I am still kind-of craving it!

Here is a great recipe…

Sweet Potato Kale Soup

Ingredients

  • 4 ounces fresh kale
  • 1 large onion-chopped
  • 3 ½ tsp. Italian seasoning
  • 2 tsp. olive oil
  • 3 cans (14 ½ ounces each) vegetable broth
  • 2 cans (15 ounces each) white kidney beans
  • 1 pound sweet potatoes, peeled and cubed
  • 6 garlic gloves, minced
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  1. Cut out and discard the thick vein form each kale leaf. Coarsely chop kale. Set aside. In a large saucepan, saute onion and Italian seasoning in oil until tender.
  2. Stir in broth, beans, sweet potatoes, and kale.
  3. Bring to a boil, reduce heat and simmer uncovered for 10 minutes. Stir in garlic, salt and pepper.
  4. Simmer 10-15 minutes longer or until potatoes are tender.
