Shredded Chicken. The Best Slow Cooker Shredded Chicken.  You might be thinking why is it the best??

I will give you several reasons.

  1. It has a secret ingredient that makes it flavorful and moist.
  2. It is easy to prepare.
  3. It has many uses.

I love to have shredded chicken in my fridge and freezer! It is sooooo simple to grab a brag from the freezer in the morning and then make any meal with it for dinner. However, I have only used this recipe for canned chicken to have shredded chicken on hand. I think I have tried baking the chicken before, on pan in the oven, and that has turned out ok, but not super moist. I have never boiled my chicken in a pot, that just seems like to much work.

The secret ingredient….

a bay leaf.

The bay leaf releases it flavor during the slow cooking process. This meal is slow cooked for 6 hours. The longer the bay leaf is in the in the slow cooker the better.

My husband introduced me to bay leaves in the Dominican Republic. You add them when you are cooking, and remove them afterwards. They add the best flavor! I am excited to use them more often in my cooking.

Cooking tip …. just put the whole bay leaf into the slow cooker. Don’t break it up. It will be easier to remove once done cooking, if not torn into tiny pieces.

The Best Slow Cooker Shredded Chicken


  • 3-4 chicken pieces-boneless skinless
  • 1 onion, peeled and quartered
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1 tsp. cracked black peppercorns
  • 1 bay leaf
  • water


  1. Place all ingredients in slow cooker. Add water to cover. Cook on low for 6 hours, or until it is cooked all the way through. Allow to cool in liquid.
  2. Shred the meat with fingers or a fork.
  3. Cover and refrigerate for use the next day.

**Just don’t forget to remove the bay leaf after cooking. I have never eaten and or bitten into a bay leaf, but they say it is really bitter. Once the chicken is cooked and cooled, shred it on a plate and store away for a quick and easy meal.

I love to use mine in a {throw something together fast} veggie stir-fry. The flavor just stands out!

I never would have thought that the key to having the most flavorful and moist chicken would come from a bay leaf.. but it does.
