Pumpkin Chocolate Chip Muffins

pumpkin season can’t be without these pumpkin chocolate chip muffins. I reduced the sugar added stevia, made them with gluten-free muffin mix and gluten-free bread flour, and added a few more chips to make them extra sweet.

pumpkin muffinsSeptember is almost coming to an end… however we still have the next two months for pumpkin everything. I knew I couldn’t let this season go by without making some pumpkin muffins. I know I have posted a cake mix easy pumpkin muffin mix before but with some health changes I have made in my life… I choose not to eat cake mix anymore. However… I really am in love with pumpkin right now. So… I adapted a recipe and switched out the cake mix for a gluten-free muffin mix and some all-purpose baking flour.

Yup… they turned out really good. I reduced the sugar by a bit and added some stevia in the raw to make it less of refined sugar. I loved them!

I made them and was trying to learn how to take some photos with a remote control. Still couldn’t figure it out, but I did learn to use a different setting so that my hands don’t shake the camera. I think it is funny… I learn something new every time I take pictures. I love it!

Here is the recipe…

Pumpkin Chocolate Chip Muffins

Ingredients

  • 2 cups Hodgson Mill All Purpose Baking Flour
  • 1 cup Maple Grove Farms Gluten Free All Purpose Baking Mix
  • ½ cup sugar
  • ½ cup stevia in the raw
  • 2 tsp. pumpkin pie spice
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 4 eggs, slightly beaten
  • 2 cups canned pumpkin
  • ½ cup butter, melted
  • ½ cup chocolate chips, white chocolate chips, and butterscotch chips each

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt in a large bowl.
  3. In a smaller bowl, beat eggs. Add pumpkin and butter. Blend well.
  4. Stir in chocolate chips.
  5. Pour this mixture into the flour mixture and fold in until just moistened.
  6. Spoon into prepared muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.

I really hope you are enjoying this season. I get to spend this next week with my parents {they are in town visiting}. We are doing puzzles, baking, shopping, and playing games! I love my parents. They are the best ever!
