First of all I ate way to many of these cookies this weekend! Chocolate Pumpkin Cookies. I adapted this recipe to make them gluten free and lighter in the sugar category and pumpkin of course!

Did you know that Baker’s chocolate has no sugar?! I didn’t know that. It is pure chocolate!!! It is 100% cacao! I think I knew this but until my recent lifestyle change it didn’t click. Pure chocolate is really good for you! It doesn’t increase your blood sugar or lead to a sugar crash. It is great for diabetics and it is great for those watching their sugars. I am glad that this finally registered in my brain. I am not one to have to have chocolate but these cookies really hit the spot.

Here is the yummy recipe…

Chocolate Pumpkin Cookies


  • 3 squares Baker's unsweetened chocolate
  • 1 cup butter
  • 1 cup sugar { I used ½ cup sugar and ½ cup stevia }
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups all purpose flour { I used 2 cups gluten free all-purpose baking mix }
  • 1 tsp. baking soda
  • ¼ tsp. sal
  • additional sugar { I used stevia }
  • pecans-chopped
  • ½ cup pumpkin-optional


  1. Microwave chocolate and butter in a large bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted.
  2. Stir sugar and stevia into chocolate mixture until well blended. Stir in egg and vanilla. If adding pumpkin stir in completely. Mix in flour, soda, and salt. Refrigerate 30 minutes.
  3. Heat oven to 375 degrees. Shape dough into 1 inch balls or use cookie scoop. Roll in sugar and or pecans.
  4. Place on ungreased cookie sheet. Bake for 8-10 minutes. Remove from cookie sheet and place on wire rack.

Friday night we went on a date to see the magic of Craig Davis. He was absolutely amazing! We had front row seats and I still couldn’t believe all the tricks he did. His show … Davis Circus of Illusion was stunting. His wife started off the show by singing a few numbers and her voice gave me the goosebumps. Some people are so talented! Then Craig had a great show including his talented companion Myryka. She is a top rated belly dancer! She was the best I have ever seen!


She moved her body and belly like I have never seen before! She has been in the industry for about 20 + years and she started belly dancing at 17. It was fun to meet her in person and talk with her about her career. She has been an assistant to Craig for about 10 years and them combined… make for one outstanding show!!


Saturday Morning we woke the girls early and went hiking! Usually we like to sleep in, but I wanted to get out and enjoy the somewhat cooler air!


The last time I hiked Silly Mountain it was before I was married… I was engaged to Nathan and we hiked to watch the sunset. The girls have been some other time… but not as a family.



They really liked the hike! My husband and I were commenting about the name… it really is silly how you climb the mountain. There are many trails… and they lead to the top… but they are weird on how they get there!



It was cooler temperature and it was a nice hike. To see the cactus all along the hike is particularly interesting! I asked why they looked like this… and my husband said back in the day they liked to come and shoot at the cactus… when it wasn’t protected. I am not sure why else they would be like this… but they seem pretty old and hole…y to me!






We went around the back side first… and then enjoyed the shade and some breakfast. The girls always like to hike ahead of us and poor baby Jayd has a hard time keeping up.




This part of the trail really did make me huff and puff! Nathan is such a good dad to help with Jayd. He held her hand most of the time… and made her walk the entire trail. She did it… with a complaining heart the whole way, but she did it!



The views were very beautiful! The weather couldn’t have been any better!





They pointed out Flat Iron and talked about that hike. They have such an adventurous daddy who likes to be outdoors and took the older two girls a while back! Jane was too little and now she says she wants to go, I even mentioned I would go with them next time too.

We stopped for a break.. and some breakfast.






Then we finally started towards the top!







We made it!

The girls loved seeing the entire valley. We rested for a while… and I explored around for a bit.





I just love being with my family!


One of my favorite parts about this hike… was this girl… and her comments. She saw a hole and we told her it was a snake hole. She kinda looked deeper into the whole and said, ” nobody is home”. It was soooo cute!






I love this man! He is such a sport to always be willing to go with the crazy ideas I have sometimes.

They were excited to head back down Silly Mountain. We enjoyed this simple hike!

After our drive home…we spent the most of the afternoon cleaning out the garage. Sorry… no before and after pictures! We went to Lowe’s and bought shelves and organized all my home decor on some of the new shelving. We did not finish it, but we got a good head start on it.

After the cleaning was put to a stop…we came in and made ourselves some lunch and then we watched our church’s general conference. It was a spiritual meeting broadcasted over the TV into our homes. We listened and watched and were uplifted.

After the block was over… I spent some more time  deep cleaning my little girls room. Yes… a full day of Saturday chores. We hauled some more junk to goodwill, and took the girls to get some haircuts. They were in need of a good trim. Bo and Bree got some bangs, which they were both thrilled with!  Jane cut off a few inches, and baby Jayd kept saying she was scared to get a hair cut. I told her she was okay, but finally when she got her cut… she kept talking about seeing her cut and how she liked it.

We went out to dinner at Jason’s Deli and came home… gave the girls a bath… and put them to bed!

Whew… what a weekend! The weekend was a success!

Good Food… Good Family Time.
