why haven’t I shared this recipe with you before??

This recipe is an oldie but goodie! I got this recipe from my sister-in-law many moons ago. I love how it uses a whole cup of pumpkin.

I had a friend who needed some cookies for a bake sale that they are having at our local library. I decided these needed to be made for the event.

Here is the recipe…

Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup pumpkin
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp salt
  • 1 tsp. soda, dissolved into 1 tsp. milk
  • 1 cup chocolate chips
  • ½ cup nuts, optional
  • 1 tsp. vanilla

Instructions

  1. Combine pumpkin, sugar, oil, and egg. Add dry ingredients. Mix in soda/milk mixture. Add remaining ingredients. Bake at 375 for 10-12 minutes.
  2. Remove and let cool.

How are you enjoying pumpkin season??

I have to admit since going on this lifestyle change I haven’t had as many goodies… which is very good I know… but that means its hard when you have to bake goodies like these and not be able to enjoy them. I know the benefits and the reason or purpose behind my lifestyle change and it truly has blessed me and made me healthier, but my problem isn’t with the cookies themselves, it’s the fact that I just cannot have one. I am sure you can relate!!!

These definitely are not healthy just because they have pumpkin in them… but they are really good pumpkin cookies!

I simply melted some orange candy chocolate melts and scribbled some on it! I think it gives it a little bit more of a pumpkin flare!

Do you have a favorite pumpkin cookie recipe?? Here is another one that I share earlier on the blog that is made with a cake mix… just as good!

I need to add more real pumpkin into my life through other means… but cookies is always a good idea!!!

If you must choose anything to make for your sweetheart this Valentines Day… chose these Dark Chocolate Chews. You must top it with a sweet maraschino cherry to complete this yummy dark chocolate cherry filled cookie.

Last night I made a batch of cookies and I had to dump the entire batch in the garbage… you see they were very salty. Salty enough that I couldn’t eat them. Experimenting in the kitchen can sometimes be a tough job.. but someone has to do it.

As I was dumping the cookies into the garbage I looked over and my daughter had sat down to do her homework and I had to take a double look… home slice was rocking the math homework. My girls love to dress up and change clothes like a lot!

This I guess is their new outfit for the time being.

Today I needed to redeem myself from the taste test yesterday and so I made some very good dark chocolate cookies… that I knew needed no taste tasting. I love recipes that are just that good.

These Dark Chocolate Chews are filled with Toll House® Dark Chocolate Morsels with Cherry Flavored Filling. Let me just say they taste like one of my moms all time favorite chocolate… Christopher’s Big Cherry. The cherry filling inside these chips are smooth and silky.

Dark Chocolate Chews

Dark Chocolate Chews

Ingredients

  • ½ cup butter
  • 1 cup sugar
  • 3/4 tsp. baking soda
  • ¼ tsp. salt
  • 2 eggs
  • 1 3-ounce bittersweet or dark chocolate, melted and cooled
  • 1 ¾ cups all-purpose flour ( ** In this recipe and photos I used gluten free flour)
  • 1 cup dark chocolate cherry filled morsels
  • *sugar for added sprinkling and texture

Instructions

  1. In a large mixing bowl beat butter and sugar until softened. Add the sugar, baking soda, and salt. Beat in eggs and melted chocolate until combined. Beat in the flour.
  2. Stir in morsels.
  3. Drop dough onto ungreased cookie sheet 2 inches apart.
  4. Bake at 375 degrees for 10-12 minutes.
  5. Remove cookies to cooling rack and let cool.

I am not typically a huge fan of dark chocolate and I usually don’t buy it, but these are a great combination of morsels and chocolate. I love how the bag is little but the one less ounce may boost the price.

Several years ago.. I remember living in the state of Washington and having a young toddler at home and my husband working two jobs and living off of nothing. We didn’t know anybody and we didn’t have any money. I decided one date night that I needed to do something special and that was bake/cook him something. I created a nice meal right in my living room… but the baby to bed early and we had a wonderful dinner. These dark chocolate chews should have made an appearance that night… they didn’t… but now I wish they could have. I will have to recreate that special meal… and serve him these dark chocolate cookies.

I could only imagine a lovely table set for two with a very nice meal and then you pull out these wonderful cookies with a cherry on top… simply romantic.

First of all I ate way to many of these cookies this weekend! Chocolate Pumpkin Cookies. I adapted this recipe to make them gluten free and lighter in the sugar category and pumpkin of course!

Did you know that Baker’s chocolate has no sugar?! I didn’t know that. It is pure chocolate!!! It is 100% cacao! I think I knew this but until my recent lifestyle change it didn’t click. Pure chocolate is really good for you! It doesn’t increase your blood sugar or lead to a sugar crash. It is great for diabetics and it is great for those watching their sugars. I am glad that this finally registered in my brain. I am not one to have to have chocolate but these cookies really hit the spot.

You won’t believe what these Pumpkin Cookies are made with! They are made with a buttery cake mix, pumpkin, and cool whip! They were devoured by my girls and their cousins over the weekend!

I wanted to share with you my adapted recipe of Pumpkin Cookies. These are a cake mix cookie that are indulgent, scrumptious, moist, and of course filled with pumpkin! They are dusted with powdered sugar, which give them a light and airy feeling!

I found this recipe and adapted it and I love how the cookies turned out!

Today is a new month! I am happy for the up and coming months and the exciting time of year with so many celebrations. For the last few months…I have given up sugar and therefore I have bought Stevia in the Raw… to sweeten my foods. On the back of the bag it states that you can use Stevia to bake with. I decided I needed to bake something, but I wanted to make something that I could eat! I have been baking a lot of goodies lately which is really hard to resist and I have done a pretty good job!

But… a cookie sounded really good!

I love peanut butter cookies and decided to give this recipe a try. I mean it only has 4 ingredients. Would it turn out?? Would I like them??

Well… it came back as an astounding…. yEs…. these cookies are worth the little bit of sugar they have in them!

They are flourless which means they are gluten free! They have a good healthy fat in them…. all natural peanut butter. The egg is a good source of protein. Using half stevia and half sugar… lowers the sugar content and calories! Now… don’t get me wrong… I know Peanut Butter has a high calorie and fat content, but when you don’t have any sugar at all and your body needs a good fat… this is simply a better choice.

If you have never used Stevia… it is really easy to use. You simply replace half the sugar with stevia in baked goods. It’s a lot like a fine fairy dust powder, but it cuts the calories in half. You must still use some sugar for moisture, browning, and rising. I have been taste testing Stevia in many recipes. I am glad that I can cut some calories somewhere! { I found by bag of Stevia in the baking aisle of my local grocery store. }
