This lemon pudding pie  has just the right amount of  lemon to it. It is tart… yet smooth.  Lemon Pudding Pie… a great after dinner dessert to serve to those who love a good lemon pie!  Grab a spoon and dig in!

Here in Arizona the citrus are in season and everybody who has a tree has so many lemons, limes, and oranges falling of their trees that they try to get rid of them. I love it, because I do not have fruit trees in my backyard, but I have friends and family who have given them to me.  Because of the lemon season that is so prevalent right now… I have been craving everything lemon. Lemon Bread. Lemon Cookies. Lemon Chicken.

You name it…. if it has lemon in it I am craving it.

For dessert the other night…. craving something lemon… I decided to make a Lemon Pudding Pie.

This recipe is something I experimented with and it turned out great! This Lemon Pudding Pie turned out to be just what I was envisioning in my mind.

Here is the recipe…

Lemon Pudding Pie

Ingredients

  • 1 {4.3 ounce} Lemon Jell-O Cook and Serve NOT the instant pudding & pie filling.
  • 1 { 3 ounce } Vanilla Jell-O Cook and Serve NOT the instant pudding & pie filling.
  • 1 tub cool whip { 8 ounce }
  • graham cracker pie crust

Instructions

  1. Prepare the Lemon Jell-O according to the directions on the box. Let cool.
  2. Meanwhile...Prepare the Vanilla Jell-O according to the directions on the box. Let cool.
  3. In large mixing bowl... combine the two puddings and then mix in the cool whip.
  4. Fill pie crust to the top and refrigerate for at least an hour.
  5. ** You will have extra pudding. You can fill mini graham cracker pie crusts, you can use it for anything else you would like. **

I still can’t get over how tart the lemon is in this pudding pie. It makes it so perfect. Now… serving it up might be a little bit difficult. Yes… I made both a large pie and some mini ones. The mini ones were easy to eat. I just served them exactly  how they are. But… the large pie you have to cut and don’t forget this is pudding…. so it won’t set up hard like a cheesecake or other type of pie. It is somewhat difficult to do… but can be done. You could just eat it out of the pie tin… if you would like. I know I would.

I just sprinkled some cinnamon and sugar on the top… but you don’t have to. I love how this Lemon Pudding Pie turned out and I can’t wait to make this one again…I love lemon season!!

Oh my word! I have a recipe for you! Okay… so you know those caramel apples you see in display cases of Rocky Mountain Chocolate Factory. You know the ones you cannot resist and you buy every. single. time.

Well… I wanted to make my own. This isn’t a copy cat recipe per say… it is just a great caramel apple recipe!! I don’t know if you could actually copy their apples they are that good!

But these Caramel Apples…are just as good I promise!!

As you can see… I made several different kinds but they are all fantastic!

I love pumpkin pie!!!  It is my all-time favorite pie. With pumpkin season upon us and the up-and-coming holidays… I knew I needed to make a pumpkin pie.  This Double Layer Pumpkin Pie… was different because of its double layer.  It has a layer of cream cheese…. then the pumpkin on the top. I chose a chocolate graham cracker crust… and it made the whole pie very mouth-watering!

Did you know that over 5o million pies are consumed on Thanksgiving Day alone??

That is a lot of pies!

What about the rest of the year??

I wonder how many pies are consumed… then??

It has to be a lot. 

Well… this was a very easy pie to make and consume!

Double Layer Pumpkin Pie

*adapted from Simple Desserts

  • 8 ounces cream cheese softened
  • 1 Tbsp. milk
  • 1 Tbsp. sugar
  • 1 [8 ounce] container of cool whip

 

  • 1 cup cold milk
  • 1 pkg. (3.4 oz serving size)  vanilla instant pudding
  • 1 pkg. (3.5 oz serving size) white chocolate instant pudding
  • 1 can pumpkin (16 ounces)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 2 prepared graham cracker crusts                * I used one regular and one chocolate.

Directions:

Beat cream cheese, 1 Tbsp milk, and sugar in large bowl. Gently stir in whipped topping.

Divide and spread the cream cheese mixture between the two crusts. Spread on bottom of crust.

Pour 1 cup of milk into a separate bowl, and add pudding mixes.

Beat with mixer for 2 minutes. (mixture will be thick)

Stir in pumpkin and spices. Beat until combined.

Divide and spread the pumpkin mixture between the two crusts. Spread it over the cream cheese layer.

Refrigerate 4  hours or until set.

Garnish with additional whipped topping.

I concur with John Whittier… there is nothing that brings back the past… like Pumpkin Pie

I came across this recipe in my mom’s recipe box. I knew I wanted to make it. I have never made pumpkin fudge… and let me tell you this recipe is so very good!!!

Imagine you are at a holiday [fall or halloween] party and they want you to bring a dessert… and you think to yourself what should I bring??

Bring this fudge. It will be the hit of the party.

Here is the recipe…

Pumpkin Fudge

  • 1 1/2 sugar
  • 2/3 cup evaporated milk
  • 1/2 cup canned pumpkin
  • 1/4 tsp. salt
  • 2 Tbsp. butter
  • 1 1/2 tsp pumpkin pie spice
  • 2 cups mini marshmallows
  • 1 {12 ounce} bag vanilla chips
  • 1 tsp. vanilla

Directions:

1. Bring sugar, pumpkin, salt, butter, and pumpkin pie spice to a boil over medium heat.

2. Boil 12 minutes stirring constantly.

2. Stir in marshmallows, chips, and vanilla. Stir until  melted.

3. Pour into butter pan and put in fridge overnight.

For never having tasted pumpkin fudge before… I am so HAPPY I made this fudge.

This fudge is so indulgent… its dangerous. Its very rich… but oh so very good!!

If you are in need of a serious pumpkin recipe… this is the one for you. As you can see… it is very difficult to cut squares out of it. So… be careful it sticks to the knife.

I love this time of year. I love all the fall baking, the fall recipes, and the pumpkin everything!
