Chunky Apple Molasses Muffins

Chunky Apple Molasses Muffins. I just like the name of the these muffins. They are chunky.  In my  experience, they are full of sweet apple goodness. They bring the smell of the kitchen to your heart. 


Today I needed to bake. I haven’t baked in a over a month.  As most of you know we are moving to Florida to start our “cruising” lifestyle. We are excited! Beyond excited.  As I was getting things ready to sale today… I came across my cookbook cabinet. This has many cook books that I have collected over the last five years. It really breaks my heart in having to get rid of them. I love to cook and bake. I love to find new recipes and try them out. I collect cook books. Well… I pulled them out of that cupboard and put in the for sale pile. My only wish is that someone who loves to cook as much as me… will buy them all!

Whatever Wednesday

Whatever Wednesday! Today… sharing a few random thoughts about my life, my photography, and my home. valsurprise-5

I love my life! I love my home! I love my children!

I am very grateful to be alive. TO BE A MOM. TO BE A HOMEMAKER. I am just grateful… to be. Some days are filled with struggles and disappoints, but I am truly grateful for each and every day to learn and to grow.

valsurprise-4Today Jayd and I did a little preschool craft… ice painting.


I simply froze some water and red food coloring. I let it freeze for about 4 hours. Then we painted.


We painted on white and pink paper. I had some hearts cut out and I simply let her “water-color paint” over the hearts. It was pretty cool! It was also very messy! Our hands turned bright red from the food coloring. I put in about 4 drops so that might have been a bit much… but I wanted red hearts! We didn’t color very long because it just stained our hands… but we did get a few hearts.

We also did laundry! Yea! It seemed it needed to be done. IT WAS SUCH A WONDERFUL THING… Jayd just came over and started helping me. She took all the towels little and big and folded them all by herself! No Joke. I loved it. AND I even put them away like that.. I didn’t refold them. She helped me from her heart and I wanted to remember that.


So… she became the Queen of Laundry today.





After our little craft and some laundry dancing… we read some of the cutest stories we borrowed from the Library.

WE loved this story on hearts. Paper and Real.

So… I had Jayd cut out some hearts for the very first time.

She did great!


She even said that she messed up. I said it is okay… we don’t have to be perfect. And her response…. But I want it to be perfect. I think we are in trouble. It was a cute perfect scenario after reading the book.


Here are our imperfect… cut out… food coloring… water coloring… painted hearts!

We had such a great time crafting… reading… and water coloring!


And meanwhile… earlier in the week this happened.




Bree copied the flamingo free printable that I have displayed on my entry way table from pocket full of paint… and she copied it by heart. I love how Bree can draw. I love how she loves to be creative.

I made some { what I thought were } tasty Whole Wheat Blueberry Muffins aka Whole Wheat Stuffed Muffins. The girls didn’t enjoy them because they are ” too grainy”. I am trying to be gluten-free but I do not have any health issues it is just a matter of priority, so I sneaked a few and they tasted great to me! My kids on the hand are not gluten-free, but they prefer something other than whole grain!



I added some mini chocolate chips, some peanut butter and some almond butter. I found the boxed mix at my local grocery store… but you can find it online here.

I simply followed the recipe on the back with a few adjustments. wholewheatstuffedmuffins

Here is the recipe…

Whole Wheat Blueberry Muffins


  • 1 6 oz. box muffin mix
  • 2 Tbsp Powdered Stevia
  • 1 Tbsp. Coconut Oil
  • ¾ cup coconut milk
  • 1 egg
  • *optional items peanut butter, almond butter, chocolate chips, dried fruit etc.


  1. Preheat oven to 400 degrees. Line mini muffin pan with muffin liners.
  2. Place muffin mix into mixing bowl.
  3. Add sugar, coconut oil, milk, and egg.
  4. With a spoon mix until blended.
  5. Add mini chocolate chips. Mix.
  6. Fill muffin cups ⅔ full.
  7. Bake at 400 degrees for 10 -12 minutes.


From my home to yours… it doesn’t have to be perfect all the time… even our hearts!

Pumpkin Chip Muffins. These are great muffin that almost is biscuit like, but full of goodness and pumpkin sweetness! 


Happy Monday Evening!

I made these Pumpkin Chip Muffins for my family for breakfast this morning… and they were good! They can be gluten-free, but they don’t have to be for those that aren’t really gluten intolerant but choose to be for health reasons. Either way… pumpkin chip goodness!

They are my first recipe using the pumpkin spice chips!

I think they were heavenly! The chips add such a distinct pumpkin flavor! These muffins are like a biscuit, but have a moist center stuffed with pumpkin chips!

Pumpkin Chocolate Chip Muffins

pumpkin season can’t be without these pumpkin chocolate chip muffins. I reduced the sugar added stevia, made them with gluten-free muffin mix and gluten-free bread flour, and added a few more chips to make them extra sweet.

pumpkin muffinsSeptember is almost coming to an end… however we still have the next two months for pumpkin everything. I knew I couldn’t let this season go by without making some pumpkin muffins. I know I have posted a cake mix easy pumpkin muffin mix before but with some health changes I have made in my life… I choose not to eat cake mix anymore. However… I really am in love with pumpkin right now. So… I adapted a recipe and switched out the cake mix for a gluten-free muffin mix and some all-purpose baking flour.

Yup… they turned out really good. I reduced the sugar by a bit and added some stevia in the raw to make it less of refined sugar. I loved them!

Fluffy Biscuit Muffins

My girls love biscuits and gravy. I mean really love that breakfast choice! I don’t remember having them a whole lot when I was growing up. I think it was just cereal. But for some reason… I make biscuits and gravy all the time. My husband loves it too!

I haven’t been a master at making biscuits from scratch. I usually buy the pre-made biscuits from the store. I throw them on a pan, and make some country gravy.

However… I have been on a baking kick lately and have wanted to try making more from home. This recipe proved to be a great alternative.
