Better Together

Family Photos! Its a love-and-hate relationship when that word is mentioned. I decided I needed the love part to work its way out of that relationship and come forth.

Last year has come to a close and we are already almost three months into a new year. I promised myself that I would do a better job at taking more photos with my husband, myself in the photos, and with the family.

Yes… we did it. We took the family photos.  ON. THE. BEACH. What better place to have family photos. The beach goes on for miles and miles down the A1A. We choose a beach in Satellite Beach called Hightower Beach.  As we were driving  their I couldn’t but help mention the movie Police Academy. Have you seen it? If not… rent it! Its hilarious!  Anyways…any beach along the coast….you will be flying high in the Space Coast.

Right now, we love living here in Indian Harbor Beach. It is a quiet and peaceful little town. The beach is within walking distance and boy oh boy…. does it call to me every day.  I love being near a beach.

As most of you know Nathan my husband was gone for 2 ½ months. He was able to become a crew member on a boat being delivered from South Africa to Ft. Lauderdale, Florida. After he got home the idea of really making it happen to have family photos hit hard. That is when we came across the photographer Kristin and we scheduled our family photos. I loved the pictures she took of Nathan and I. It totally captures our deep love for each other and our happily married life. And our love for the ocean.  

Nathan and I decided we really wanted to keep our family pictures simple. We did not rush out to buy all new outfits for the girls. We did not want too bling up the photos with much. We wanted to capture a simple family photo. The beach as our background we knew we couldn’t go wrong.

The funny thing was is we took one afternoon and rummaged around the girls closets and our closets to find the color scheme we wanted and this is what we came up with. The only shirt we had to buy was his. 

I really missed Nathan while he was gone for those long winter months. I am grateful for each day we get to spend together now. I just love having his arms around me. It calms my fears and quiets my anxieties. Our marriage is not perfect… but we do love each other with all of our hearts. We are trying every day to just be patient with each other, communicate better, and don’t let our opinions out weight the truth. We want our marriage to Be Healthy and Happy. It takes work. And we are working at it…. every single day.

How to make your own Coconut Milk

Can you make your own coconut milk? Why… yes you can. Homemade Coconut Milk. At first I was a little skeptical but it truly came out beautifully! And it was super easy.. easier than I thought. My dream one day is to become self-reliant and make more things from scratch. It is a learning process for sure. But this… homemade coconut milk will now a forever hold a place in my heart.

The other day we had a friend offer us some free coconuts from her very own coconut tree. My husband came home with 5 coconuts. I do not like the coconut water from the coconut. I know it has many healthy benefits… but I just can’t drink the stuff. My husband loves it and drinks it all the time. After he chopped into a few of the coconuts with his handy-dandy machete and drank them he threw them away.

He threw them away! My husband doesn’t usually throw things away. I was in shock.

Then he decided to get them back out and save the actual coconut. ( No they weren’t gross from the garbage can.) I keep a tidy garbage can. I am just kidding.

He cut them up into pieces and we saved them in a storage bag in the fridge.

Fast forward about 5-6 days and every time I opened the fridge I had this coconut staring at me. I wanted to use it up. I did not want it to go to waste.  I had not cooked with it all. I thought to myself… what can I do with this coconut??

Of course… I googled it.

I came across this recipe.. and decided to give it a try. I was so grateful to find this recipe. As I was making this recipe… the thought came to me that I could I use this in my smoothies, in my baking, in almost anything that requires milk. I was extremely excited… especially since I knew eventually we would be roaming the remote islands of the world and coconut milk is expensive. Now.. I can make my own!!!!!

Here is the original creator of the recipe… Wellness Mama. Please click on her link for the recipe. I sat and read almost every 320 comments so I knew I was getting into. What might come about with problems? Well as you can see.. my turned out beautiful!!

I stored the three bottles into the fridge. I ended up not using all the coconut that my husband had saved, but I was truly grateful for this recipe!

My first smoothie came out excellent! I don’t have a particular recipe that I used… just some coconut milk, almond milk, frozen fruit, spinach, and some protein powder. I added some peanut butter and flax-seed into.. and it was delicious! I am now onto my second smoothie… trying all different combinations. Oh… I also added mango aloe vera juice! It was extremely pleasing!

Jayd is really growing up. She is such a great helper in the kitchen! She loves to be right in the middle of my baking or cooking projects! She also loves to be in the camera’s face! I am loving this homeschooling time with her.

We went to the beach again this week… and just walked. Some of us tried to kick sea shells. LOL.

I think she finally really kicked one… after much practice. We patiently waited for the sunset and were happy with its results!

On Thanksgiving morning we went on a family walk on the causeway. The weather was perfect! Look at those coconut milk skies. It sprinkled rain on us. We made it to the top and turned around the little ones just kept running and getting out their energy. We were hungry we got back and guess what I a made… coconut milk smoothies.

Basket Brigade? What is Basket Brigade?

“A Thanksgiving Basket Brigade is where a group of local individuals, families, and volunteers come together in the spirit of contribution and help hundreds of families in and around the Space Coast to have the blessing of a Thanksgiving meal.”

We are new to the area but when we came across this Space Coast Basket Brigade on Facebook… we knew we wanted to get involved. We wanted to help those in our community.

How did we get involved?

We simply donated some jars of gravy.

And then this afternoon we were able to go and help unloaded boxes and sort the food into tables. We had a wonderful time volunteering. The girls did a great job “helping”.

We sorted donate items onto the tables that had the item listed. This was a very organized and well run event. They had many volunteers… but my favorite was watching my girls get involved. Team work girls… great job!

I know many many people were part of making this happen. I am super impressed with their goal of 1500 baskets to help those in need. They started out back in 2009 with only 4 baskets. Last year they did over 1000… and this year their goal is 1500 baskets… SIMPLY AMAZING!

We were blessed to donate some time and help sort through the donations. I loved being there and dancing, telling the girls to stop messing around, and saying go put this in the green bean pile. YEA… we had a lot of fun!

A few times.. I found them outside taking a water break. It was hot in the gym and it was nice and refreshing outside.

After our water break… we got back to work!

And Jayd even ran a few stairs! After about an hour they pretty much were done.. helping. But I was super proud of them for donating gravy and time!

I even found one young man amongst the donations who did this all on his own in his own neighborhood and collected needed items.

Thank you Basket Brigade for allowing my girls to donate time and help such a great community cause!

I have had a family member in the past who did not get thanksgiving one year and this would have been a blessing in his life. To those of you who are receiving a basket… may you have a blessed thanksgiving!

Yesterday… I posted on Instagram an amazing book called, “The Spider and the Fly” by Toni DiTerlizzi. We have been studying spiders in our homeschooling since Halloween is coming up… we read this story and then we did some crafting. This book was a great because of the illustrations.. oh my goodness! They are gorgeous. If you get this book…. please read the letter from the Spider at the end of the story. It is hilarious! tiniestpumpkin-23

We love this book!

“I always get my bug.”

After reading this book to Jayd I did some research on what to teach in homeschooling. As you can see I highly stress a reading curriculum. I love to read. I want to instill that into my children. The more you read the more you know!

I came across this blog… edsnapshots.com

She is a homeschool guru and gives much good information. I started listening to her podcasts and they are amazing! She is really giving me a clear understanding in how I would love to run my homeschooling.  One thing she shares is, The Morning Basket. It is time set aside as a family to memorize, teach, uplift, learn, and grow. What you teach totally depends on your situation. I highly recommend starting with #1 and listening to them. I can’t wait to listen too more.

As I was running last night I listened to #2. I loved it! I am going to re-listen to it again tonight! And write down the things that I really want to incorporate into my homeschooling. This was my view as I was running and listening… not to bad… not too bad at all!

Okay so… the other day we were playing Family Trivial Pursuit and there was a question about a nursery rhythm. I did not know it. Sing a song of six-pence. I had to look it up to read it for the first time. 

 

I decided to look up the Mother Goose Nursery Rhythms. I found this link in my research.

In Jayd’s homeschooling I have now decided to make sure she knows all of the Nursery Rhythms. The first one we have started with Itsy Bitsy Spider. We have started to sing the song. We found this adorable book by Keith Chapman, Itsy Bitsy Spider.

It’s a book about how the Itsy Bitsy spider is blown out the window and from animal to animal. itsybitsy

This book reinforces colors. It rhymes very nice too. I love how it comes back to the mom’s web!

Now… I am sure Jayd has heard this nursery rhyme from when she was a baby, but I am glad to teach it to her now and have her relearn it. Repetition is helpful in the learning process.

The next nursery rhyme that I found next on the previous link was,” I saw a ship a-sailing.” I hadn’t heard that one yet either!!! I decided it was a great one for the whole family to learn, since we will be heading off onto the boat next year!

I simply printed it off… (not pinterest worthy) but I wanted the girls to be able to draw the nursery rhythm onto the print. Here is a copy if you are interested in it…isawashipnr

This is great and simple FUN craft for the kids! Even adults seem to enjoy playing a round of

“pumpkin punch”.

Items needed are:

  1. punch balloons
  2. permanent black marker
  3. hours of time to play
  4. ears to listen to the laugher of the kids for hours and hours!

The package we bought included the perfect Halloween colors! We had orange, white, and green. We made a pumpkin, ghost, and Frankenstein. (Our green one had a hole in it.)
