Last night’s dinner consisted of this Butter Chicken. Butter chicken is an authentic Indian cuisine. It is a spicy tomato and butter sauce that is added to cooked cubed chicken. Done in less than 30 minutes. For those nights… when you really don’t know what to cook, you can make this butter chicken. It is spicy, but nothing a cold glass of milk can’t cure.

I love it.

My husband hates it.

Who wins outs most of the time… my husband.

But… I still think Chicken Pot Pie should be served often. It is such a comforting meal. I like the Marie Callender’s store version the best, but to be honest I haven’t bought them in years!  This is a homemade pot pie and it was totally worth making!

My family loves spaghetti. I make it quite often. However, I have never made homemade spaghetti sauce before. I searched a few of my old family recipes and found this one. I am so glad that I did. This homemade spaghetti sauce is delicious.  I was always afraid to make the sauce as it wouldn’t taste like the store-bought ones. Yes… I actually like all the store-bought kinds. I don’t have a favorite, but I am a traditional fan. Anyways, this is a very tasty homemade spaghetti sauce. My kid says that it is spicy, but we like it that way. I was surprised at how easy it was to make it. It does take time, so prepare yourself that way, but we loved it!

Here is the recipe…

Homemade Spaghetti Sauce

Ingredients

  • 6 cans tomato sauce
  • 1 onion, chopped
  • 2 Tbsp. Worchestershire sauce
  • 2 tsp. chili powder
  • 2 tsp. garlic powder
  • 1 ½ tsp. salt
  • 1 tsp. basil
  • 1 tsp. oregano
  • pepper to taste

Instructions

  1. Directions:
  2. Add all ingredients into a large sauce pan.
  3. Simmer for 1 hour.

Do you remember the first time you ever made spaghetti?

I do. I was just setting out on my own as a college student. I lived in Utah at the time, and was staying in some housing on BYU campus, during the summer.  I didn’t attend BYU, but wanted to get out on my own for the first time. Anyways, I was wanting to make dinner.  Spaghetti seemed simple enough. I remember boiling the water for the noodles.  Once the noodles were done, I remember dumping a jar of store-bought spaghetti sauce over it. That was it. No spices, no meat, no veggies… nothing.

I ate it because I was hungry, but I made it on my own for the very first time! I think I either under cooked or over cooked the noodles. Yea… it was fun times.

Fast Forward… 15 years. A homemade spaghetti sauce that is flavorful, spicy, full of character, and amazing! I have learned that variety is the spice of life. I have learned how to do so much more… and making this homemade spaghetti sauce was such a pleasure.

You can also use this as a pizza sauce.

You can also add hamburger, veggies, or whatever you would like to it. This is just a good base.

My daughter Bo loves spaghetti very much! She is always requesting it for dinner. I am happy to oblige because for me it is a very simple meal. I remember one time mentioning my meal plan to a family member and she said that she hardly every makes spaghetti.

What??

I hope she will make it now.

A new year has begun. I am very excited for the new year to come. I have looked back on this last year and it was wonderful!

I have a few goals and dreams that I would like to accomplish this year. How about you??

One of them is to use my camera more.

One of them is to make every day extraordinary.

One of them is to be simple.

 

And to be honest… one of them is to not eat out as much. I love to eat out… and so I am thinking I am going to fail at this goal. But part of success is learning from your failures, right?!

So… with that in mind, I want to eat out less.

In order for that to happen… I have to cook more!

This is a real struggle.

I can plan my meals ahead of time, but then when it truly comes down to it, it takes preparation, effort, and diligence.

Two days ago… I started this journey. I have been “home” cooking.

I also wanted to use what I had on hand.

I always have on hand… black forest ham. It is one of my favorite staples to have in my fridge.  When I came across this recipe… I was very excited to try it. We did. Our family loved it! I loved it!

Hot Ham Hoagie Sandwiches

Hot Ham Hoagie Sandwiches

Ingredients

  • 1 cup barbecue sauce
  • 3/4 tsp. ground mustard
  • 3/4 tsp. garlic salt
  • 1/4 tsp. ground cloves
  • 1 lb. thinly sliced fully cooked ham
  • lettuce
  • tomato
  • onion
  • Swiss cheese
  • Hoagie Buns, split

Instructions

  1. Preheat oven to 250 degrees.
  2. In a saucepan over medium heat, combine the first five ingredients; bring to a boil.
  3. Reduce heat and cover and simmer for 15 minutes.
  4. Meanwhile, split hoagie buns and top with Swiss cheese. Put into oven; until the cheese is melted. Remove from oven.
  5. Top with lettuce, tomato, onion, and ham mixture.
  6. Serve warm.

These Hot Ham Hoagies is a real simple meal that can be put together quickly. It is easy…it takes less than 1/2 hour to prepare it and place it on the dinner table.

This is how I adapted the recipe…

I used simple deli black forest ham.

I used Sweet ‘n Spicy barbecue Sauce.

I used this dressing… Litehouse Jalapeño Ranch Dressing.

I suggest adding the onions. They made it heavenly. I don’t like tomatoes, but my husband does… so I cut them up for him.

Serve with potato chips, pickles, and or any type of salad. We served ours with a fruit salad.

I have honestly struggled with “making dinner” the last couple of weeks. I also know it was the holidays and it was “easier” to eat out.

I hope to change that within the next 45 days.

I think would make a good lunch as well… but we served it as a great Hot Ham Haogies dinner!
