Happy Monday Friends!

I had a very exciting weekend! My husband and I were given an all-expense paid trip to the iHeart Radio Music Festival in Las Vegas, Nevada. It was such a great experience! We got to see so many talented musicians all on one stage. We laughed. We sang along and sometimes we didn’t…. because honestly we didn’t know who the band was. {YES… we are old!} We slept, we danced, and we ate lots of yummy food! It was wonderful!

While we were away… we had our [old] laminate kitchen countertops ripped out and they are installing granite countertops as we [speak].  I am so excited!!

However… that means no baking in the kitchen this morning!  I have been thinking about doing some muffin tips for quite a while… and where as my kitchen is not working at the moment… I figured this would be a perfect time.

These muffin tips came from The New Betty Crocker Cookbook.

I love these tips! They have really helped me bake with confidence. It’s really frustrating when you follow a recipe and it doesn’t turn out. These muffin tips will help you make the perfect muffin.

The perfect muffin is…

  • golden brown
  • slightly rounded
  • tender
  • light
  • even-textured
  • moist inside
  • easy to remove from the pan

I believe the number one rule with making a perfect muffin is…. do not over mix!!!

Here are some additional muffin tips…

  • Stir in the dry ingredients just until it is moistened.
  • The batter should be lumpy.
  • Use an ice cream scoop when disturbing batter.
  • When muffins are done, immediately remove them from the pan.

French Toast Muffins.

My husband’s favorite breakfast is…

French Toast.

Hands down.

What is your husband’s favorite breakfast??

We love having french toast for breakfast in our home. I decided I needed to make some French Toast Muffins.

Now… these muffins are not fried on a griddle but are baked in the oven. They are topped with a cinnamon and sugar topping.

French Toast Muffins

* adapted from the original recipe French Breakfast Puffs by Better Homes and Gardens Annual Recipes 1997

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. salt
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup butter, melted

French Toast Topping

  • 1/4 cup sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 cup butter, melted

Directions:

1. Preheat oven to 350 degrees. Line muffin tin with paper cups.

2. In a large bowl, combine flour, sugar, baking powder, nutmeg, and salt. Mix to combine.

3. In a separate bowl, beat egg slightly. Add milk and melted butter.

4. Add egg mixture to flour mixture.

5. Stir until just moistened.

6. Fill prepared muffin cups with batter.

7. Bake at 350 degrees for 20-25 minutes or until golden brown.

Meanwhile… in a shallow bowl combine the cinnamon and sugar.

Immediately dip the tops of hot muffins into melted butter. Then dip into the cinnamon/sugar mixture till coated. { Be extremely careful, the muffins are hot!}

Serve warm. Makes a half-dozen muffins.

On another note… I had to download the free trial of Photoshop. I usually use Aperture but it was giving me so many problems. I have loved using it for the past few months, but it was so slow, out of date, and it stated that I had some problems that I could not get fixed.

I went back to uploading my photos into iPhoto and was like… YES… it is supposed to be this simple. I have downloaded a trial of Photoshop.

As a blogger… I love picasa!

It is so user-friendly.

I am sure once I start using Photoshop and get to know it… it will become easier. But…. learning something new is always a hard thing for me.

When you start out your day… you pretty much have an idea of how it is going to go. You have things planned. You have appointments. You have tasks to complete. You have a job to do.

Being a stay at home mom…

I get to be pretty flexible with my schedule. That is nice.

But…. Today has been a very interesting day.

None… of those things got done. My kids didn’t go to school. My appointments got cancelled. My tasks got postponed.
Why you ask??

Rain.

Yes… I know its crazy. But… we had record rainfall today.

However… a little later than planned due to unseen problems… I am grateful to bring you this

Caramel Apple Muffin Recipe.

           This recipe is great! It is loaded with apples… drizzled with caramel.

            It was the perfect muffin for the day that I have had.

         { Not bad… just different}

Here is the delicious apple stuffed muffin recipe…

Caramel Apple Muffins

*adapted from 2001 Taste of Home Annual Recipes

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 3/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1 egg
  • 1/2 cup milk
  • 3 Tbsp. vegetable oil
  • 3 Tbsp. applesauce
  • 1 medium apple- peeled and grated

Topping:

  • 1/4 cup packed brown sugar
  • 1 Tbsp. all-purpose flour
  • 2 Tbsp. cold butter
  • 1/2 cup old-fashioned oats

Preheat oven to 400 degrees.

Line muffin tin with paper cups.

In a bowl, combine the first 6 ingredients. Mix to combine.

In a separate bowl combine, egg, milk,  oil, and applesauce.

Stir into dry ingredients until moistened.

Stir in apple.

Fill muffin cups. { I could only get 10 muffins out of this recipe}

For the Topping combine:

  • 1/4 cup brown sugar
  • 1 Tbsp. all-purpose flour
  • 2 Tbsp. cold butter
  • 1/2 cup old-fashioned oats

For topping, in a small bowl combine brown sugar and flour. Cut in butter until crumbly. Stir in oats.

Sprinkle over muffins.

Bake at 4o0 degrees for 18-22 minutes… or until a toothpick comes out clean.

Top with your choice of hot caramel sauce.

I choose to drizzle simply caramel over the caramel apple muffins… but I am sure you could add nuts, chocolate, etc.

Even though my day didn’t turn out how I planned it… it still was a beautiful day!

Good things came out of unseen difficult circumstances…and I will still able to bring you a great muffin recipe.

September is great for many apples recipes and pumpkin recipes. This Caramel Apple Muffin recipe is…

I have the perfect banana split muffin recipe for you.  It is so very easy.  To be honest… I love this banana muffin recipe. Do you have a favorite banana muffin recipe?? If not… you do now.

I love banana splits. I haven’t had one in a very long time.

Have you??

Well… I had to remedy that today since it is National Banana Split Day. Whenever we have banana splits the girls NEVER eat their bananas. I know… its weird. I don’t make them eat the banana, but I think that is the best part.

And the cherry.

This Muffin is basically a banana muffin topped with all the yummy banana split toppings. I am sorry… but no ice-cream. It is a crunchy muffin topped with whip cream, hot fudge, caramel topping, sprinkles, and a cherry. Yea… I made the girls eat the bananas in this muffin. They couldn’t resist it. It was filled with bananas and chocolate chips. No more not eating the banana. The banana is disguised. Kids seem to eat fruits and vegetables better that way.

Simple.

Yet… oh so delicious.

Here is the recipe…

Banana Split Muffins

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 cups flour
  • 2 eggs
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 3 Tbsp. buttermilk
  • 2-3 mashed bananas

Preheat oven to 325 degrees.
Line Muffin tin with paper cups.

Beat together all the ingredients and then if desired add chocolate chips and or nuts.

Pour into prepared paper cups.

Bake at 325 for 15-18 minutes or until golden brown.

Remove from pans immediately and cool on wire rack.

Once cooled, top with your favorite banana split toppings.

Serve immediately.
