why haven’t I shared this recipe with you before??

This recipe is an oldie but goodie! I got this recipe from my sister-in-law many moons ago. I love how it uses a whole cup of pumpkin.

I had a friend who needed some cookies for a bake sale that they are having at our local library. I decided these needed to be made for the event.

Here is the recipe…

Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 cup pumpkin
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp salt
  • 1 tsp. soda, dissolved into 1 tsp. milk
  • 1 cup chocolate chips
  • ½ cup nuts, optional
  • 1 tsp. vanilla

Instructions

  1. Combine pumpkin, sugar, oil, and egg. Add dry ingredients. Mix in soda/milk mixture. Add remaining ingredients. Bake at 375 for 10-12 minutes.
  2. Remove and let cool.

How are you enjoying pumpkin season??

I have to admit since going on this lifestyle change I haven’t had as many goodies… which is very good I know… but that means its hard when you have to bake goodies like these and not be able to enjoy them. I know the benefits and the reason or purpose behind my lifestyle change and it truly has blessed me and made me healthier, but my problem isn’t with the cookies themselves, it’s the fact that I just cannot have one. I am sure you can relate!!!

These definitely are not healthy just because they have pumpkin in them… but they are really good pumpkin cookies!

I simply melted some orange candy chocolate melts and scribbled some on it! I think it gives it a little bit more of a pumpkin flare!

Do you have a favorite pumpkin cookie recipe?? Here is another one that I share earlier on the blog that is made with a cake mix… just as good!

I need to add more real pumpkin into my life through other means… but cookies is always a good idea!!!

You won’t believe what these Pumpkin Cookies are made with! They are made with a buttery cake mix, pumpkin, and cool whip! They were devoured by my girls and their cousins over the weekend!

I wanted to share with you my adapted recipe of Pumpkin Cookies. These are a cake mix cookie that are indulgent, scrumptious, moist, and of course filled with pumpkin! They are dusted with powdered sugar, which give them a light and airy feeling!

I found this recipe and adapted it and I love how the cookies turned out!

Today is a new month! I am happy for the up and coming months and the exciting time of year with so many celebrations. For the last few months…I have given up sugar and therefore I have bought Stevia in the Raw… to sweeten my foods. On the back of the bag it states that you can use Stevia to bake with. I decided I needed to bake something, but I wanted to make something that I could eat! I have been baking a lot of goodies lately which is really hard to resist and I have done a pretty good job!

But… a cookie sounded really good!

I love peanut butter cookies and decided to give this recipe a try. I mean it only has 4 ingredients. Would it turn out?? Would I like them??

Well… it came back as an astounding…. yEs…. these cookies are worth the little bit of sugar they have in them!

They are flourless which means they are gluten free! They have a good healthy fat in them…. all natural peanut butter. The egg is a good source of protein. Using half stevia and half sugar… lowers the sugar content and calories! Now… don’t get me wrong… I know Peanut Butter has a high calorie and fat content, but when you don’t have any sugar at all and your body needs a good fat… this is simply a better choice.

If you have never used Stevia… it is really easy to use. You simply replace half the sugar with stevia in baked goods. It’s a lot like a fine fairy dust powder, but it cuts the calories in half. You must still use some sugar for moisture, browning, and rising. I have been taste testing Stevia in many recipes. I am glad that I can cut some calories somewhere! { I found by bag of Stevia in the baking aisle of my local grocery store. }

Chocolate Chip Shortbread

This is a very easy shortbread cookie that even your little ones can make and prepare for their mom’s for Mother’s Day. This cookie is a simple shortbread stuffed with mini semi-sweet chocolate chips served by your little (mini) ones!

Mother’s Day is right around the corner. I love being in the kitchen! Isn’t it true that…. Mother’s are the heart of the home. I believe the mother in the kitchen baking with her children can be the heart of the home, also.  I mean we are there anyway right?? Making breakfast, packing lunches, having dinner etc. I spend a lot of time in my kitchen. I love it when my girls pull up a 5 gallon bucket and put on an apron (that is too big for them) and ask to help me.  It melts my heart. My little one loves to get into the measuring cup drawer and pull them all out and play with them while I am baking or cooking. It is the sweetest thing…ever!

This Chocolate Chip Shortbread is perfect for them to follow a recipe, add the ingredients, beat it up, and bake it. (age appropriate of course)

My girls loved making this for me! We were together… and I really enjoyed watching them eat it and dipping it into a cold glass of milk!

Now.. some of you may not know what shortbread is. Shortbread is a type of biscuit traditionally made with one part sugar, two parts butter, and three parts flour. This is an adaption into cookie form. Yea!!

Here is the recipe…

Chocolate Chip Shortbread

Ingredients

  • ½ cup butter, softened
  • ½ cup sugar
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • ¼ tsp. salt
  • ½ cup mini semisweet chocolate chips
  • *** for best flavor, do not substitute margarine for butter***

Instructions

  1. Preheat oven to 375 degrees.
  2. Beat butter and sugar in a large bowl with beater, until fluffly.
  3. Beat in vanilla.
  4. Add flour and salt.
  5. Beat at low speed.
  6. Stir in chocolate chips.
  7. Divide dough in half. Press each half into engrossed 8-inch round cake pan.
  8. Bake 12 minutes or until edges are golden brown.
  9. Score shortbread with sharp knife, taking care not to cut completely through shortbread.
  10. Make 8 wedges per pan.
  11. Let pans stand on wire racks for 10 minutes.
  12. Invert shortbread onto wire racks.
  13. Cool completely. Break into wedges.

This recipe cut into 8 wedges make a great shortbread. My daughter Bree loves pizookie’s. She asked if this was one. I said not quite. It is different. But why not… scoop some ice cream on top. I am sure it would be fine and good!

Just make sure the kiddos bake it and serve it up to you. Isn’t that what Mother’s Day is all about… them loving and serving you.
