Turkey Stuffed Acorn Squash

Dinner is served. I came across this recipe in my Betty Crocker cookbook called Pork-filled Acorn squash. I bookmarked it and kept the recipe in the back of my mind. Then one day at the super market I decided to buy some acorn squash. (I have never bought them before and I was a little bit intimidated.) I came home and stored them on my counter for several days… still not sure how to cook them.  I decided I needed to use them up.

I got out the recipe book, however, I usually don’t eat a lot of pork so I made up my own recipe.

Take…. Sloppy Joes and stuff it into an acorn squash… you get turkey stuffed acorn squash.

We loved this recipe!!! When eating… simply mix the acorn squash with the stuffed turkey and you will have a delightful dinner.

This acorn squash is a shaped dark green winter squash (Cucurbita pepo) with a ridged surface and mildly sweet yellow to orange flesh.

When I was scooping out the seeds the girls asked if it was a pumpkin. Nope… it is an acorn squash.
The acorn squash has a very sweet flavor.

The squirrel’s a brave and brazen sort

Who flies from tree to tree for sport

He hunts for acorns high and low

And saves them up for winter’s snow

When trees are bare, acorns no more

The squirrel comes up to my front door

As if to ask for food from me

Here is the recipe…

Turkey Stuffed Acorn Squash

Ingredients

  • acorn squash
  • 1 lb ground turkey
  • 2 Tbsp minced garlic
  • ½ cup onion, diced
  • ½ cup green peppers, diced
  • ½ cup cooked rice
  • 1 8 ounce can tomato sauce
  • 1 cup ketchup-optional
  • 1 Tbsp. mustard
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp brown sugar
  • 1 tsp. cayenne pepper
  • 1 tsp. chili powder
  • salt and pepper to taste
  • Gouda Cheese-or any cheese of your liking

Instructions

  1. Wash Squash.
  2. Cut each squash lengthwise in half. Remove seeds and fibers.
  3. Place squash halves, cut sides up, into an ungreased 9x13 pan.
  4. Sprinkle cut sides with salt and pepper.
  5. Pour water into dish until ¼ inch deep.
  6. Cover and bake at 400 degrees for 30 minutes.
  7. Meanwhile, brown ground turkey and minced garlic on stove top. Add remaining ingredients and simmer for about 10 minutes.
  8. Once acorn squash has cooked, removed from oven and stuff with turkey mixture. Top with Gouda Cheese.
  9. Return to oven, COVER, and bake an additional 25-30
  10. minutes.
  11. Serve warm.

I am sure you could use any number of meats, ground beef, ground chicken, or ground turkey. You could really take away or add any number of items to your meat as well. Just make it accordingly.

I loved taking my fork, scrapping off the sweet squash, mixing it with the turkey, and big bite of gouda cheese. Let me just say… I will be making this recipe again.

Mexican Shredded Beef has the perfect flavor to enrich your burritos, tacos, enchiladas, and taco salads. Put it in the crock-pot the night before and it will be ready for your Mexican meal the next day.

Today is May 5. Cinco de Mayo. It is also Taco Tuesday, so basically it is eating Mexican Food all day kind of day. I actually love… love… love… Mexican food!! It is by far my favorite choice. In keeping with the celebrating of the Mexican traditional food I am sharing our favorite recipe for Mexican Shredded Beef.  This is a great recipe that is easy, it takes 5 ingredients or less. It uses a crock-pot….so not as much work, and you can set it and forget it. This recipe is spiced with the just the right kick to make your Mexican meal stand out.

This is a chuck roast with spices and a beef Consommé. Do you know what that is??

Well…

Consomme  is basically a clear soup made with concentrated stock. Like Beef stock or chicken stock. I bought the can from the grocery store. You can find it by all the soups. It is a stock that flavors your meat.

The beef consomme makes the roast tender and spicy.

Here is the recipe…

Mexican Shredded Beef

Ingredients

  • 1 (3 pound) chuck roast
  • 1 ( 10.5 ounce) can beef consommé
  • 2 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 3 Tbsp. red wine vinegar

Instructions

  1. Put all ingredients in a crock pot. Cook on low for 10-12 hours, or on high 6-8 hours until the meats shreds easily with a fork.

This makes a great meal… but it also makes great leftovers. Save it for another meal later in the week. If you can’t get around to using it, freeze it.

You can use this Mexican Shredded Beef for Tacos, Burritos, Enchiladas, Nachos, Taco Salad (my favorite)… you really could just eat it by itself with some Spanish Rice. Yes… it is versatile like that.

Last night’s dinner consisted of this Butter Chicken. Butter chicken is an authentic Indian cuisine. It is a spicy tomato and butter sauce that is added to cooked cubed chicken. Done in less than 30 minutes. For those nights… when you really don’t know what to cook, you can make this butter chicken. It is spicy, but nothing a cold glass of milk can’t cure.

Chicken Pot Pie.

I love it.

My husband hates it.

Who wins outs most of the time… my husband.

But… I still think Chicken Pot Pie should be served often. It is such a comforting meal. I like the Marie Callender’s store version the best, but to be honest I haven’t bought them in years!  This is a homemade pot pie and it was totally worth making!
