Pumpkin Chocolate Chip Muffins

pumpkin season can’t be without these pumpkin chocolate chip muffins. I reduced the sugar added stevia, made them with gluten-free muffin mix and gluten-free bread flour, and added a few more chips to make them extra sweet.

pumpkin muffinsSeptember is almost coming to an end… however we still have the next two months for pumpkin everything. I knew I couldn’t let this season go by without making some pumpkin muffins. I know I have posted a cake mix easy pumpkin muffin mix before but with some health changes I have made in my life… I choose not to eat cake mix anymore. However… I really am in love with pumpkin right now. So… I adapted a recipe and switched out the cake mix for a gluten-free muffin mix and some all-purpose baking flour.

Yup… they turned out really good. I reduced the sugar by a bit and added some stevia in the raw to make it less of refined sugar. I loved them!

Peanut Butter Banana Muffins

peanutbutterbananamuffinsI made the mistake the other day of buying regular plain m&m’s. My husband does not like them. I told him that they weren’t actually for him, but for a bingo game. Well…. he informed that I am only allowed to buy peanut butter m&m’s. Okay I got it.

Blueberry Oat Muffins.

I haven’t made muffins in a long time for Muffin Monday. My daughter Jane, brought home from her school library, a cookbook. She wanted me to make this pizza casserole. I made it for dinner the following Friday for pizza night. She LOVED it. The following Monday her library book was due and she turned in the book… but happily came home and said,”Mom I have another cook book for you!”

The pizza casserole was in that book too… She must have really liked that pizza casserole!!

Anyways… on to the muffins.

I made these one morning for breakfast and the reason I REALLY liked them was that they didn’t require buttermilk. Most muffins require buttermilk to make them a decent muffin. I did however, just share a quick and easy buttermilk substitute that would work if you needed buttermilk.

However… these didn’t and they were really good!

Blueberry Oat Muffins

Here is the recipe adapted from Taste of Home…

Blueberry Oat Muffins

Ingredients

  • 1 ¼ cups flour
  • ½ cup sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 2 egg whites
  • ½ cup water
  • ⅓ cup oil
  • 1 cup fresh or frozen blueberries
  • cinnamon and sugar mixture

Instructions

  1. Directions:
  2. Preheat oven to 400 degrees. Line muffin pan with paper liners.
  3. In a large bowl combine first six ingredients. In another small bowl combine egg whites, water, and oil. Mix well. Stir into dry ingredients until moistened. Sprinkle with cinnamon and sugar.
  4. Bake at 400 degrees for 18-22 minutes.
  5. Remove from oven and let sit for 5 minutes. Then remove to wire rack.
  6. Enjoy!

 These muffins are healthy and delicious.

I love blueberries! I love the color! I love the taste!

You know… you are supposed to eat berries every day to help maintain a healthy body.

If that is the case… then I think these are considered healthy.. right?!

French Toast Muffins.

My husband’s favorite breakfast is…

French Toast.

Hands down.

What is your husband’s favorite breakfast??

We love having french toast for breakfast in our home. I decided I needed to make some French Toast Muffins.

Now… these muffins are not fried on a griddle but are baked in the oven. They are topped with a cinnamon and sugar topping.

French Toast Muffins

* adapted from the original recipe French Breakfast Puffs by Better Homes and Gardens Annual Recipes 1997

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. salt
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup butter, melted

French Toast Topping

  • 1/4 cup sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 cup butter, melted

Directions:

1. Preheat oven to 350 degrees. Line muffin tin with paper cups.

2. In a large bowl, combine flour, sugar, baking powder, nutmeg, and salt. Mix to combine.

3. In a separate bowl, beat egg slightly. Add milk and melted butter.

4. Add egg mixture to flour mixture.

5. Stir until just moistened.

6. Fill prepared muffin cups with batter.

7. Bake at 350 degrees for 20-25 minutes or until golden brown.

Meanwhile… in a shallow bowl combine the cinnamon and sugar.

Immediately dip the tops of hot muffins into melted butter. Then dip into the cinnamon/sugar mixture till coated. { Be extremely careful, the muffins are hot!}

Serve warm. Makes a half-dozen muffins.

On another note… I had to download the free trial of Photoshop. I usually use Aperture but it was giving me so many problems. I have loved using it for the past few months, but it was so slow, out of date, and it stated that I had some problems that I could not get fixed.

I went back to uploading my photos into iPhoto and was like… YES… it is supposed to be this simple. I have downloaded a trial of Photoshop.

As a blogger… I love picasa!

It is so user-friendly.

I am sure once I start using Photoshop and get to know it… it will become easier. But…. learning something new is always a hard thing for me.
