Pumpkin Loaf

Pumpkin Loaf.  This loaf of pumpkin bread is made with 1 cup of pumpkin and 1 cup of applesauce. It just screams fall! It is full of goodness, sweetness, and happiness.


I found this cute finger play poem for Jayd and we loved it!

We sat down and welcomed Mr. Pumpkin.

Mr. Pumpkin! Well, hello! 

wave hello

You’re back again this year!

I see your eyes; I see your nose;

point to eyes then to nose

 You’re grinning ear to ear!

Inside we’ll put a candle stick

curve left arm around like a round pumpkin

To make a lantern light;

put right hand into curve of left arm

 Then, set you on the old front porch

move left (curved) arm onto floor or lap

And let you shine all night!

hold both arms up, palm up

I follow Kneaders on Instagram and they have had a count down for the release of their pumpkin bread. For the last five days I have seen pictures of their pumpkin bread on their feed. It made me want to make it and so I did. I was so glad I did, because I was in charge of bringing some bread to an activity and so I knew it had to be this bread.

And…. a new month is coming tomorrow. September. The start of Fall. The start of all things pumpkin. I love pumpkin season!

Pumpkin Chocolate Chip Bread

I have spent my morning in the kitchen… baking and cleaning.

 Cleaning… you ask??

Yes…  we got our granite countertops replaced and because of the replacement I have fine little pieces of wood all over the inside of my cabinets. I also have not cleaned them out since my husband added kitchen hardware to our cabinets and drawers.

I sooooo wanted to be brave like Sam from The Junk House and install the kitchen cabinet hardware myself…

but it so was easy to have my husband and father complete the task for me.

Before… I got home from an errand they had all the holes drilled out!

However… I would highly recommend using a installing template… I know it made it super easy for them!

I found mine at home depot!

I love how the kitchen is coming along.


While I was cleaning away… I had the aroma of this Pumpkin Chocolate Chip Bread

baking in the background.

It smelled heavenly!

Then I tasted it.

It was heavenly!

Rich pumpkin and chocolate chips… baked into a bread loaf!

After a long time cleaning… it was nice to sit down and eat a piece of pumpkin chocolate chip bread!

Okay… maybe two pieces of bread.

Here is the recipe…

Pumpkin Chocolate Chip Bread

*adapted from Marci Coombs 

  • 5 eggs
  • 1 1/3 cup oil
  • 1 {16 ounce} can pumpkin
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • 2 {3 ounce} pkg. instant vanilla pudding
  • mini chocolate chips {about 1 cup}

Preheat oven to 350 degrees. Grease 2 bread loaf pans with shortening and flour.

In a large mixing bowl, beat eggs. Add the next 9 ingredients. Mix until combined.

Pour into bread loaf pans.

Bake at 350 degrees for 1 hour, or until a toothpick comes out clean.

Remove from oven and let sit on counter for 10 minutes. Then remove from bread loaf pan and let sit on wire rack until cool.
