Pumpkin Loaf

Pumpkin Loaf.  This loaf of pumpkin bread is made with 1 cup of pumpkin and 1 cup of applesauce. It just screams fall! It is full of goodness, sweetness, and happiness.


I found this cute finger play poem for Jayd and we loved it!

Mr. Pumpkin! Well, hello! 

wave hello

You’re back again this year!

I see your eyes; I see your nose;

point to eyes then to nose

 You’re grinning ear to ear!

Inside we’ll put a candle stick

curve left arm around like a round pumpkin

To make a lantern light;

put right hand into curve of left arm

 Then, set you on the old front porch

move left (curved) arm onto floor or lap

And let you shine all night!

Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies..

why haven’t I shared this recipe with you before??

This recipe is an oldie but goodie! I got this recipe from my sister-in-law many moons ago. I love how it uses a whole cup of pumpkin.

I had a friend who needed some cookies for a bake sale that they are having at our local library. I decided these needed to be made for the event.

Here is the recipe…

Pumpkin Chocolate Chip Cookies


  • 1 cup pumpkin
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp salt
  • 1 tsp. soda, dissolved into 1 tsp. milk
  • 1 cup chocolate chips
  • ½ cup nuts, optional
  • 1 tsp. vanilla


  1. Combine pumpkin, sugar, oil, and egg. Add dry ingredients. Mix in soda/milk mixture. Add remaining ingredients. Bake at 375 for 10-12 minutes.
  2. Remove and let cool.


How are you enjoying pumpkin season??

I have to admit since going on this lifestyle change I haven’t had as many goodies… which is very good I know… but that means its hard when you have to bake goodies like these and not be able to enjoy them. I know the benefits and the reason or purpose behind my lifestyle change and it truly has blessed me and made me healthier, but my problem isn’t with the cookies themselves, it’s the fact that I just cannot have one. I am sure you can relate!!!

These definitely are not healthy just because they have pumpkin in them… but they are really good pumpkin cookies!

I simply melted some orange candy chocolate melts and scribbled some on it! I think it gives it a little bit more of a pumpkin flare!

I need to add more real pumpkin into my life through other means… but cookies is always a good idea!!!

This is great and simple FUN craft for the kids! Even adults seem to enjoy playing a round of

“pumpkin punch”.

Items needed are:

  1. punch balloons
  2. permanent black marker
  3. hours of time to play
  4. ears to listen to the laugher of the kids for hours and hours!


How to play:

The package we bought included the perfect Halloween colors! We had orange, white, and green. We made a pumpkin, ghost, and Frankenstein. (Our green one had a hole in it.)

The Tiniest Pumpkin. 

Today for home school we talked about pumpkins. We borrowed from the library this cute little book called, “The Tiniest Pumpkin, by Janet Craig.”  This was a great little read. It shares the story of waiting for Halloween to arrive and the right time to buy a pumpkin. They arrive at the pumpkin patch and find out that the pumpkins are all gone, except one… the tiniest pumpkin.


Don’t you just love tiny little pumpkins??

I really do.

This book was great for Jayd. This is a First-Start Easy Reader. Jayd does not know how to read yet, but we are practicing. The story line is great and simple.

In our classroom today… we did

  1. shapes (circle)  we cut out pumpkin shapes.
  2. we talked about colors. We mixed red and yellow to make the tiniest pumpkin cookies.
  3. we used scissors for cutting.
  4. we talked about opposites. Big and Little.  Tiny and Large.
  5. we talked about the parts of a pumpkin.

To make the cookies…

  1. shortbread cookies
  2. frosting
  3. red and yellow food coloring
  4. a place to get messy
  5. knife
  6. licorice

Please let them get dirty and messy… its part of the creative process.


These cookies do really make the simplest craft. I did not spend hours in the kitchen making homemade sugar cookies (but I plan on doing that soon enough). The frosting was store-bought as well. tiniestpumpkin-44  tiniestpumpkin-43  tiniestpumpkin-45  tiniestpumpkin-47

Hi Friends!

I hope you had a great extra long weekend! My family and I had a very enjoyable one! Spending time with family is such a treasure!

Here I go again…I am sharing another pumpkin recipe with you!

I think this Pumpkin + Angel Food Cake loaf is a great easy dessert idea! I love pumpkin. As you know it is pumpkin everything season, and so there is pumpkin in my fridge almost all the time now. I try and throw it into anything and everything! This Loaf was easy to make and I simply just added canned pumpkin to an angel food cake. Its  called a loaf because its baked like one! { don’t be fooled though, it is really a cake }
